Beef and Zucchini Noodles (Zoodles) with Tomato Sauce
Ingredients:
200g lean beef steak, thinly sliced
2 medium zucchinis, spiralized into noodles (zoodles)
1 can (14 oz) diced tomatoes (no salt added)
2 cloves garlic, minced
1/2 onion, finely chopped
1 teaspoon olive oil
1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
Salt and pepper to taste
Optional: fresh basil leaves for garnish
Optional: grated Parmesan cheese for garnish
Instructions:
Prepare the Beef:
Season the thinly sliced beef with salt, pepper, and half of the minced garlic.
In a non-stick skillet over medium-high heat, cook the beef slices for about 2-3 minutes per side or until browned. Remove from skillet and set aside.
Make the Tomato Sauce:
In the same skillet, add olive oil over medium heat.
Add the chopped onion and remaining minced garlic. Sauté until translucent, about 2-3 minutes.
Add the can of diced tomatoes (including the juice) and Italian seasoning.
Let the sauce simmer for about 5-7 minutes to allow the flavors to meld. Season with salt and pepper to taste.
Cook the Zucchini Noodles:
While the sauce is simmering, spiralize the zucchinis to make zoodles.
In a separate skillet or pot, bring water to a boil. Add the zucchini noodles and blanch for 1-2 minutes. Drain well.
Combine and Serve:
Add the cooked beef slices to the tomato sauce.
Gently mix in the zucchini noodles and stir until everything is well coated with the sauce and heated through.
Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
