Beef & Veggie Stir Fry

Ingredients:

  • 200g lean beef strips

  • 1 cup broccoli florets

  • 1/2 red bell pepper, sliced

  • 1/2 yellow bell pepper, sliced

  • 1 small carrot, julienned

  • 1/2 onion, sliced

  • 2 cloves garlic, minced

  • 1 tablespoon low-sodium soy sauce or tamari

  • 1 teaspoon sesame oil

  • 1 teaspoon cornstarch

  • 2 tablespoons water

  • Salt and pepper to taste

  • Optional: red pepper flakes for heat

Instructions:

  1. Prepare the Beef:

    • In a small bowl, mix cornstarch and water to make a slurry.

    • Add soy sauce, sesame oil, and a pinch of salt and pepper to the slurry. Stir well.

    • Marinate the beef strips in this mixture for at least 15 minutes.

  2. Stir-Fry Vegetables:

    • Heat a non-stick skillet or wok over medium-high heat.

    • Add minced garlic and sliced onion. Sauté for 1-2 minutes until fragrant.

    • Add broccoli florets, bell peppers, and julienned carrot. Stir-fry for another 3-4 minutes until vegetables are slightly tender but still crisp. Remove from skillet and set aside. (I also like to add any other in season vegetable or what I have on hand, like baby corn, water chestnuts, etc)

  3. Cook the Beef:

    • In the same skillet, add the marinated beef strips along with the marinade.

    • Stir-fry for 2-3 minutes or until the beef is cooked through and slightly caramelized.

  4. Combine:

    • Return the stir-fried vegetables to the skillet with the beef.

    • Stir well to combine everything.

    • If using red pepper flakes, add them now for extra heat.

    • Cook for another 1-2 minutes to heat everything through.

  5. Serve:

    • Divide the stir-fry into two servings.

    • You can garnish with some chopped green onions or sesame seeds if desired.
