Beef & Veggie Stir Fry
Ingredients:
200g lean beef strips
1 cup broccoli florets
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1 small carrot, julienned
1/2 onion, sliced
2 cloves garlic, minced
1 tablespoon low-sodium soy sauce or tamari
1 teaspoon sesame oil
1 teaspoon cornstarch
2 tablespoons water
Salt and pepper to taste
Optional: red pepper flakes for heat
Instructions:
Prepare the Beef:
In a small bowl, mix cornstarch and water to make a slurry.
Add soy sauce, sesame oil, and a pinch of salt and pepper to the slurry. Stir well.
Marinate the beef strips in this mixture for at least 15 minutes.
Stir-Fry Vegetables:
Heat a non-stick skillet or wok over medium-high heat.
Add minced garlic and sliced onion. Sauté for 1-2 minutes until fragrant.
Add broccoli florets, bell peppers, and julienned carrot. Stir-fry for another 3-4 minutes until vegetables are slightly tender but still crisp. Remove from skillet and set aside. (I also like to add any other in season vegetable or what I have on hand, like baby corn, water chestnuts, etc)
Cook the Beef:
In the same skillet, add the marinated beef strips along with the marinade.
Stir-fry for 2-3 minutes or until the beef is cooked through and slightly caramelized.
Combine:
Return the stir-fried vegetables to the skillet with the beef.
Stir well to combine everything.
If using red pepper flakes, add them now for extra heat.
Cook for another 1-2 minutes to heat everything through.
Serve:
Divide the stir-fry into two servings.
You can garnish with some chopped green onions or sesame seeds if desired.
