Spaghetti Squash and Turkey Meatballs
Spaghetti Squash can be a great way to get in essential vitamins, nutrients, and your recommended daily vegetable intake. It is also a tasty substitute for traditional pasta, which can contain 6x the amount of calories! Ditch the excess carbs and calories, and choose spaghetti squash next time you’re preparing a meal.
Spaghetti Squash and Turkey Meatballs
Ingredients:
1 Large Jar of Marinara Sauce - Make sure to look at the ingredients and choose an option with no added sugar. Kirkland Brand (Costco) Organic Marinara is a favorite in our house. Another option is Ragú Simply Chunky Garden Vegetable Pasta Sauce.
Turkey Meatballs There are many options for frozen, easy to prepare meatballs, or you can make them yourself and season them to your liking with 1-2lbs of ground turkey.
1 Large Spaghetti Squash
Fresh Basil and Parmesan Cheese are great ways to add flavor to your dish!
Instant Pot or Similar Pressure Cooker - This recipe uses a pressure cooker for easy and quick cooking but you can also bake (directions here) or steam your spaghetti squash if you don’t have this kitchen appliance.
Directions:
Cut the ends off of your Spaghetti Squash, and cut lengthwise. Scoop out seedy and stringy inside. Slice each half in 2” wide sections.
Cook on manual, high pressure, for 8 minutes in your pressure cooker.
While the Spaghetti Squash is cooking, prepare your Turkey Meatballs according to packaging directions. (Please note, if you are making your meatballs from scratch, you may want to season and form them before you begin cooking your spaghetti squash)
Heat sauce on stovetop, or in microwave.
When Spaghetti Squash is finished cooking, remove hard outer edge or peel.
Top with a sprinkle of fresh Basil and Parmesan cheese to your liking.
You can evenly distribute into individual meal portions for later, or serve as a family meal!
